A fall celebration: pumpkin choc chip bars

It’s time for fall! Although here in Dallas we don’t get to experience much of a seasonal change, we can still be filled with the “fall” spirit. For me, fall is all about the pumpkin and spices. Whether that be in pumpkin spice latte at Starbucks form or pumpkin muffins, I declare pumpkin the official fall food.

In honor of the first day of fall, I baked some chocolate chip pumpkin bars. After wasting plenty of time on Pinterest, I stumbled upon (oops wrong social media site!) a photo of these delicious bars. I decided to go for it and see how they turned out.

Get ready to be hooked. These bars are an incredibly delicious spin of the classic blondies, just a kick of spices (nutmeg, allspice and cinnamon) and some pumpkin. A bit of a cakey consistency, these bars make for a not too rich, not too sweet, better version of brownies. Think grandma’s pumpkin pie as a cake with chocolate chips (only better)!

RECIPE:

1/2 cup pumpkin puree
1 whole egg
2 egg whites
1 tbsp vegetable oil
1 cup flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground nutmeg
1/4 tsp salt
2/3 cup brown sugar, packed
3/4 cup chocolate chips

Preheat oven to 350 degrees F. Grease a 8″ square pan (or whatever size you see fit).
In a large bowl, combine pumpkin puree, eggs and oil. Add the flour, baking powder, spices, salt and brown sugar. Mix well. Add chocolate chips. Stir. Pour into pan and bake for 15-20 mins. Cool completely before cutting.
